Black pepper in chai (kali mirch) adds a gentle heat that wakes up the palate and amplifies every other spice.
Black pepper does double duty in our chai: it adds a gentle, warming pungency and — crucially — its piperine content increases the bioavailability of other spice compounds by up to 2,000%. This means the curcumin in turmeric, the gingerol in ginger, and the eugenol in cloves all become far more effective.
We source premium Indian black pepper — known for its high piperine content and complex flavour. In our Flavourful Chai, it completes the four-spice masala with a gentle kick.
In medieval Europe, black pepper was so valuable it was used as currency — rents, taxes, and dowries could all be paid in peppercorns. The phrase "peppercorn rent" (a nominal payment) originates from this era.
