In Our Chai
Assam Orthodox tea is made using the traditional rolling method rather than the CTC (Crush, Tear, Curl) process. This produces whole, twisted leaves that brew a smoother, more nuanced cup with layered flavour complexity.
In several of our blends — Calcutta Street, Assam Royal, Shahi Kesar, and Rose Mulethi — we add Assam Orthodox alongside CTC to create a richer, more textured drinking experience. The Orthodox component adds depth and a subtle sweetness that CTC alone cannot deliver.
Orthodox tea processing preserves the whole leaf shape, resulting in a brew with more subtle, complex flavours compared to CTC. The same Assam leaf, processed two different ways, produces remarkably different cups of chai.
